June 27...Chilli Beef Hotpot with Gluten-free Cheese Dumplings

Chilli Beef Hotpot.
Take a slab of cow and roughly cube the meat.
In a stockpot/saucepan sautee onions in a drizzle of oil (or treat yourself and chuck in a pound of butter for those clogged arteries).
Dice carrot and zucchini, toss with gay abandon into the pot.
Throw in cubed meat (which should read meat2 ?) and glug in a healthy slurp of red wine.
Fling in a handful of leafy greens, a large amount of chopped cauliflower and hide those Brussels sprouts in there, too, so the fragile hubby/wife/kid/mother-in-law won't have flashback terrors of being made to eat the stone cold greens the next morning for brekkie.
Sprinkle in 2 teaspoons of chicken stock powder and a healthy amount of chilli (to taste, or leave out altogether if you prefer).
*And enough water to just cover all ingredients, let simmer and reduce somewhat.

Cheese Dumplings.
Toss roughly 2 cups of plain flour into a bowl, throw in a couple of teaspoons of baking powder (or self raising flour can be used. I also made this with gluten-free flour).
Add cracked pepper, rub in a tablespoon of butter until it resembles breadcrumbs.
Slurp in enough milk to bring the whole thing together into a pliable dough.
Cut 5cm cubes of cheese (this recipe made 8)
Flatter out a hunk of dough in your hand, place a cube of cheese in the centre then work the dough up and around the cheese until it's completely covered.
Roll dumplings in hand to ensure round shape and cheese coverage.
Wait til beef hotpot is ready (when vegies are cooked through) then add the dumplings gently.
Cover for 15-20mins (leave longer if you wish just to ensure cheese melts inside dumpling).
Then serve.

June 18...Creamy Mushroom Risotto

  • Take a half a cup of rice (whichever type floats your boat) and sit it on the bench.
  • Into a saucepan with a little oil sautee as many mushies that tickles your fancy, until cooked through.
  • While still on the heat dump the half a cup of rice into the pot, stir through.
  • Slowly add a few ladles of chicken stock - approx. 750ml in all.
  • Stir the rice then slowly add more stock after it's absorbed; could take a little while but keep stirring and adding.
  • Sprinkle in 2 pinches of thyme.
  • Pour in the last of the stock, turn off the heat, whack a lid on the pot then walk away to catch up with the gossip on a social networking site for about, ohhh, 2 hours as the rice finishes soaking in all the stock.
  • Oh, alright, make it 40 mins if you're really pushed for time.
  • Throw in 3/4 cup of milk, stir like mad, over a high heat, then once the mixture is hot toss in half a cup of grated cheese (more or less to taste, type of cheese own choice again).
  • Serve with a meat dish of your choice or on it's own and with hot buttered rolls.

June 17....Red Wine Curry Beef Casserole

  • Hack gravy beef/chuck steak into 5 cm cubes, toss through seasoning of choice, sautee in pan with 2 chopped onions.
  • Whack a lid on to keep in the flavour (or cover with that dreadful serving platter your mother-in-law gave you for Christmas).
  • Chop vegies of choice - carrots, spuds, celery, parsnip, turnip or any of the ones about to turn nasty in the crisper in the fridge - then sautee for 5 to 10 mins in a heavy bottomed pot in a little oil over a medium flame.
  • Then add the meat and onions to the vegies.
  • Flick in 2 tablespoons of tomato paste.
  • Enough vegetable stock to cover.
  • Sprinkle in curry powder, Garam Masala and a pinch of cayenne pepper (to taste), toss in a cup of frozen beans, toss in a cup of red wine (from the bottle stashed up the back of the pantry you've forgotten about for 12 months) making certain none of the sediment goes in (best double check that with a glass for the cook).
  • Gently place on top of the mixture at least 2 handfuls of spinach leaves; these will wilt into the casserole as it heats up.
  • Stir like buggery then let simmer over a small flame for several hours (or on and off for 15 min bursts throughout the day as you wander through the kitchen between taking over the world and removing grass stains from the carpet).
  • Serve with heavily buttered crusty bread and another glass of that red.

Hot Beef Stew with Creamy Smashed Spuds for cold Winter nights

Roughly chop chuck or gravy steak into 1 inch square cubes, then caramelise them in a pan with a light spray of oil.
Caramelise sliced onions (x2) in same pan.
Sprinkle with Cayenne seasoning.
Heat a little oil in a large pot and sautee finely chopped celery, carrots, leeks, broccoli, red or green capsicum ( or vegies of choice) then toss in the meat and onions.
Pour some beef/chicken stock into the pan and heat to get all the caramelised flavours off the bottom then chuck into the vegies.
Top with a cup of red wine, and fill with more stock until everything is just covered.
Season with salt and pepper to taste (extra cayenne seasoning or herbs/spices of choice to taste).
Throw a lid on the pot, turn the heat down and let the whole catastrophe simmer for about 3 hours.

Serve with creamy smashed spud :
Boil peeled spuds, until soft.
Mash then add Greek yoghurt, chives, white pepper and whip until it's a smooth blend.
Dollop on top of stew serving, garnish with chopped parsley or extra chives and enjoy!
